Substitutions

Not exactly the same, but works in a pinch!

  • 1 stick unsalted butter = 1 stick salted butter + remove 1/4 teaspoon salt from recipe
  • 1 cup sifted cake flour = 3/4 cup sifted all-purpose flour + 2 tablespoons cornstarch
  • 1 cup light brown sugar = 1 cup white sugar plus 1/4 cup molasses
  • 1 cup dark brown sugar = 1 cup white sugar plus 1/2 cup molasses
