  • 3 tablespoons flour
  • 3 tablespoons milk
  • 1/8 teaspoon salt
  • 1/16 teaspoon baking powder
  • 3/4 teaspoon sugar
  • 1 egg
  • 1 tablespoon butter
  • 1 apple, sliced thinly
  • cinnamon sugar
    1. Preheat oven and 8″ cast iron skillet to 400F.
    2. Combine flour, baking powder, sugar, salt, milk and egg.
    3. Move the hot skillet to the stove.
    4. Put the 1 tablespoon butter in the hot skillet and let it melt.
    5. Layer the apples in the skillet, then pour egg mixture over. Sprinkle with cinnamon sugar.
    6. Bake for 15-20 minutes or until golden brown.

  • 8 eggs
  • 1/2 cup light cream or milk
  • pepper
  • fillings as desired (e.g., chopped ham, broccoli…)
  • cheese
    1. Thoroughly butter 12 muffin cups (works better than a paper liner).
    2. Put fillings in each cup, top with cheese.
    3. Beat eggs, milk, pepper together. Fill each muffin cup with egg mixture.
    4. Bake at 375F for 20-25 minutes or until set.

  • 1 cup light brown sugar
  • 1 cup white sugar
  • 1/4 c light corn syrup
  • 2 cups water
  • 3 T unsalted butter
    1. In medium saucepan bring sugars, water and corn syrup to a boil.
    2. Reduce heat and simmer vigorously for 10-15 minutes.
    3. Stir in butter.
    4. Will thicken slightly as it cools.

  • 2/3 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 4 eggs
  • 1 can (16 oz) pumpkin
  • 2/3 cup water
  • 3 1/3 cups flour
  • 1 tablespoon cocoa
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 apple, peeled and chopped
  • 2/3 cup chopped pecans
  • 2/3 cup craisins
    1. Heat oven to 350F. Grease bottoms only of 2 loaf pans, 9x5x3, or 3 loaf pans, 8.5 x 4.5 x 2. (Or muffin tins). Mix shortening and sugars. Add eggs, pumpkin and water. Blend in flour, cocoa, baking powder, baking soda, salt, cinnamon and cloves. Stir in apple, nuts and craisins.
    2. Pour into pans. Bake until wooden pick inserted in center comes out clean, about 60 – 70 minutes.
    3. Cool slightly. Remove from pans. Cool completely before slicing. To store, wrap and refrigerate no longer than 10 days. Freezes well.

    • 1 1/2 cups milk
    • 2 1/2 cups soft bread cubes
    • 6 eggs, well beaten
    • 1 cup chopped ham
    • 1 tablespoon finely chopped onion
    • 1/8 teaspoon cracked pepper
    • 1/8 teaspoon dry mustard
    • pinch cayenne pepper
    • 1/2 teaspoon salt
    • dash paprika
    1. Pour milk over bread. Stir in remaining ingredients except for paprika. Pour into a greased 6×10 glass baking dish. Sprinkle with paprika.
    2. Bake in a 350 degree oven about 45 minutes or until mixture is set and golden brown. Serve hot.
    3. Serves 6-8.

  • 2 egg yolks
  • 2 cups milk
  • 2 cups flour
  • 1 T baking powder
  • 1/2 t salt
  • 1/3 cup oil
  • 2 egg whites, stiffly beaten
    1. Combine yolks, milk and oil.
    2. Beat in dry ingredients until smooth.
    3. Fold in egg whites.

    Makes about 18 waffles.

  • 2 cups frozen blueberries
  • 1 ½ cups frozen blackberries
  • 1 ½ cups frozen raspberries
  • ¾ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 cup nonfat milk
  • 1 teaspoon vanilla extract
  • 4 large egg whites, lightly beaten
  • 1 large egg, lightly beaten
  • 1 (8 ounces) French bread (cut into 1 inch slices)
  • 1 tablespoon sugar
  • 1 tablespoon powdered sugar
    1. Preheat oven to 350 degrees.
    2. Combine first six ingredients in a 13 by 9 baking dish coated with cooking spray.
    3. Combine milk, vanilla, egg whites, and egg in shallow bowl.
    4. Stir well with a whisk.
    5. Add bread, turning bread to coat.
    6. Arrange bread in a single layer on top of berries.
    7. Sprinkle evenly with 1 T. sugar.
    8. Bake at 350 degrees uncovered for 30 minutes or until golden brown and bubbly.
    9. Sprinkle with powdered sugar.
