- 10 cups popped popcorn
- 1 cup butter
- 1 cup brown sugar
- 2 teaspoons vanilla
- 1/2 teaspoon baking soda
- Melt butter in medium saucepan; mix in brown sugar.
- Bring to a boil while stirring continuously.
- Boil 4 minutes on medium heat. Add vanilla and stir (careful: it can spatter when you add vanilla).
- Boil one minute longer.
- Add 1/2 teaspoon baking soda (caramel will fluff up).
- Stir caramel into popcorn. Pour onto a cookie sheet to cool.
